Leftover Sausage & Thyme Pasta

You'll find plenty of leftover pasta ideas on my site — I've made hundreds of variations! When my kids were younger, this was almost a weekly go-to. It’s one of the easiest ways to transform leftovers into a delicious, effortless dinner.

There are endless ways to make this recipe your own. Even if you don’t have the exact same leftovers, the idea will serve you well. Save a note in your recipe app with ideas as they come to you. Then, when you need a quick dinner, instead of reaching for a jar, you can turn what you have into a gourmet delight in minutes!

Take a look in your fridge — you might surprise yourself with what you can create. In this case, leftover sausage was sautéed in olive oil to deepen the flavor and caramelize it a bit. I added fresh thyme and tossed it with pasta.

I also warmed up some roasted tomato soup from the freezer — always a good idea to have some homemade soup stocked. Add some fruit for dessert, and dinner’s done!

Maybe add a little onion or garlic, parsley, basil, or rosemary. A splash of white wine is always divine! Here's a basic recipe to follow and ideas to modify with the ingredients you have on hand. 

 

Ingredients

Leftover sausage

Pasta 

Olive oil

Sea salt & pepper

Optional:

  • Onion or shallot
  • Garlic
  • Thyme, parsley, or rosemary
  • Dry white wine

Instructions

Heat a drizzle of olive oil in a pan over medium heat.

Optional:

  • Add some minced onion and sauté until slightly browned. 
  • Add a clove of minced garlic and cook for a minute more.

Add the sliced sausage and cook until warm. 

Add some pasta cooked al dente to the pan.

Serve, or continue with more options:

  • What else? Maybe some tomato or zucchini — you can add that too and cook until soft.
  • Add a splash of dry white wine if you like, and cook it down. 

Sprinkle in some salt and pepper and possibly some fresh herbs.

Serve your pasta! 

Notes:

Leftover pasta dishes make a great lunch for school or work. Pack warm in a thermos, and lunch is ready! Look for thermoses online or at a discount home goods store. There are many varieties to choose from
