Sausage, Rosemary & Tomato Pasta

I pulled this pasta dish together using leftovers and packed it for a picnic at the beach.

Many of the recipe ideas I share with you are about transforming leftovers into something magnificent in minutes. The only catch is that you may not have the same leftovers again or the exact leftovers used in these recipes. But that’s the beauty of it: you can take the idea and make it your own with whatever you have. Sometimes, all we need is a spark of inspiration — once you have that, the cooking part is easy!

Ingredients

Bowtie pasta — or pasta of your choice

Leftover sausage

Cherry tomatoes

Rosemary

Olive oil

Sea salt or Celtic salt & a pinch of freshly ground pepper

Instructions

Cook the pasta in salted water, reducing the cooking time on the package by 1 1/2 to 2 minutes to cook it al dente.

Drain the pasta and let it rest in a colander.

Add olive oil to the same pan you used to cook the pasta and warm it over medium heat.

Add some cherry tomatoes to the warm olive oil and cook until soft.

Chop the leftover sausage and add it to the pan.

Sprinkle in some salt, pepper, and rosemary.

Add the pasta and warm.

Enjoy warm or at room temperature for a picnic.
