Persillade is a flavorful French garnish made with parsley and garlic. Think of it as an all-purpose condiment that’s easy to whip up and perfect for adding a fresh twist to potatoes, meats, and vegetables. It’s as healthy as it is versatile!

Here, we added sautéed mushrooms from mushroom hunting in Berbezit, France. The persillade made the dish!

Parsley

Garlic

Instructions

To make persillade, finely chop parsley and garlic. That's it! 
But if you're in a hurry, like I often am, a rough chop works just fine — it’s still delicious.
For extra speed, I’ll sometimes use a mini food processor to mince everything really quickly.
Add persillade to anything you like — it's even terrific on sandwiches.

Roasted potatoes with persillade
Sautéed mushrooms with persillade
Pan-seared steak with persillade

Notes:

Keep fresh parsley and garlic on hand so you can whip this up when you like.
