As with many recipe ideas on this site, this one came together with what I had on hand — and the need for a quick idea for a first course. This simple salad is summer in a bowl. Peppery arugula, juicy watermelon, and a light lemon dressing come together in a flash. Serve it as a first course with something on the grill for the main, and fruit or ice cream for dessert — perfect for those nights when it’s too hot to cook.
Arugula
Watermelon, cut into bite-size cubes
Lemon juice and olive oil (for the dressing)
Salt and freshly ground black pepper, to taste
Optional: a few shavings of Parmesan or crumbled feta

Assemble the salad: Place arugula and watermelon on a plate or in a large bowl.
Dress and toss: Drizzle with the lemon dressing and gently toss to combine.
Serve: Top with cheese if using, and serve.
