Experimenting with what’s on hand can lead to unexpected and delicious dishes. On the second-to-last day of a recent vacation, I created this dish with honey and truffle-flavored goat cheese paired with fresh tomato. Though I wasn’t sure how the sweet and savory combination would work, it turned out to be a hit—so much so that my husband went back for seconds! This dish has since become a family favorite.

Ingredients

  • Ripe tomatoes
  • Vermont brand honey truffle goat cheese (or goat cheese of your choice)
  • Extra virgin olive oil
  • Celtic or sea salt
  • Freshly ground pepper

Optional Garnishes:

  • Fresh garlic (minced)
  • Fresh parsley, basil, or chives
  • Arugula for decoration

Instructions

  • Place a dollop of goat cheese on a slice of tomato.
  • Add your choice of garnishes such as fresh parsley, basil, chives, or a bit of minced garlic.
  • Drizzle with extra virgin olive oil and season with Celtic or sea salt and freshly ground pepper to taste.
  • Serve with toasted bread to mop up the olive oil.

Enjoy this simple yet surprising dish as a first course or light main dish, and get creative with different varieties of goat cheese and garnishes. It's impressive for entertaining too!
