Arugula Salad with Lemon Dressing

The peppery kick of arugula and the tang of fresh lemon is a magical combination. Add a drizzle of olive oil to the mix, and you’ve got a fabulous starter with a homemade dressing — ready in just two minutes! Here's how to do it.

Ingredients

  • Fresh arugula
  • Parmesan cheese
  • Fresh lemon juice
  • Olive oil

 


Instructions

Make the dressing: In a salad bowl, combine about 2 parts of olive oil with 1 part of fresh lemon juice, a pinch of sea salt, and freshly ground pepper. Whisk until well combined and emulsified. This dressing is simple to make without measuring but you can read more about making  Lemon Dressing here. 

Add the arugula: Place the arugula in the salad bowl.

Add parmesan: Shave some parmesan into the salad — it's convenient to do with a vegetable peeler.

Toss, and enjoy!

Notes

Mix up your arugula salads by adding a few fresh ingredients such as pears, chives, cherry tomatoes — or whatever else you have on hand!
