My mother-in-law shared this quick and delicious sauce with me — it takes just two minutes to make and is fabulous with asparagus or endives. You’ll find more serving ideas in the notes following the recipe.
Asparagus — green or white
Dijon sauce (Dijon mustard, olive oil, sherry vinegar or red wine vinegar)
Steam asparagus.
Serve with Dijon sauce on the side or drizzle some on top and serve the rest on the side for those who want extra.
The Dijon sauce is also wonderful drizzled over endives, bleu D'auvergne cheese, and walnuts for a first course — one of my favorite aperitifs when entertaining.
It's also divine as a dip with steamed artichokes — either to dip the leaves in or drizzle over the heart of the artichoke.
Although it's so fast and simple to make, when you want to do as little as possible to get dinner done, just place the ingredients on the table. Everyone can mix the salad on their plate — another one of my mother-in-law's helpful tips!
