Avocado and Grapefruit Salad with Lemon Dressing

This first course is an example I share in my book, which illustrates how simple it is to pull together a first course with a few fresh ingredients.

I hope this idea inspires you to make a simple first course with your favorite ingredients. Here's how I  pulled this together.

Ingredients

  • Ripe avocado, peeled, pitted, and sliced
  • Grapefruit, peeled and segmented
  • Lemon, juice
  • Olive oil
  • Pinch of sea salt
  • Freshly ground black pepper

Instructions

Prepare the Dressing: In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper until well combined. Taste and adjust seasoning as needed. You can read the Lemon Dressing recipe post here.

Assemble the Salad: On a plate or serving platter, alternate slices of avocado and grapefruit segments to make it look pretty!

Dress the Salad: Drizzle the lemon dressing evenly over the avocado and grapefruit.

Serve: Serve immediately and enjoy this vibrant and healthy salad as a first course or light lunch with a little something else.

Notes

This salad is also excellent with orange instead of grapefruit. Both are classic French combinations as is serving this dish with a drizzle of vinaigrette dressing instead of lemon dressing.
