Potatoes are the beginning of countless dishes. It’s easy to whip up something with them, but they do take time to cook. That’s why it’s a good idea to put potatoes on to boil while you're at home so they are ready when you need them.

To make it fast and easy to do, boil your potatoes with the skin on. This not only saves you the time it takes to peel them, it also preserves the firmness of the photos, and once cooked, the skin comes right off. Or you can leave the skin on to save even more time. Plus, potato skins are rich in potassium and magnesium and can contain up to twelve times more antioxidants than the inside of the potato.

Instructions

Place the potatoes in a pot and cover with water.

Bring the water to a soft boil and cook until the potatoes are tender (about 20 minutes for medium potatoes).

Drain and allow them to cool before peeling — or not — and store them in the fridge for up to 4-5 days.

One day, I boiled potatoes in the same water I had used to blanch some asparagus. I figured the water was there. Also, I wondered if the potatoes would absorb vitamins from the water and benefit my picky eater who won’t eat asparagus. One can hope.

Slice and bake with cheese
