This morning, I did my usual kitchen check-in. I asked myself the perennial question, "What's for dinner tonight?" Salmon sounds good tonight, and it's quick to make. I take the salmon out of the freezer so it can thaw. There's the melon I cut last night, cherries, something for a salad, and camembert if we want it. That's good enough. Then, it was off to work...
Today, I submitted the review of edits on my book manuscript. Hitting send is liberating, nerve-wracking, and exciting all at once. After several long weeks of working on edits, I decided it was the perfect evening to pop the bubbles I'd been saving. Having Champagne on a Monday seems even more luxurious than on a Friday. It's unexpected, and it's a reminder that we don't have to wait for the weekend for a treat.
What's something simple you can weave into your week for a treat? Perhaps take dinner to the park for a picnic or make a fun dessert for Wednesday? A small change in your dinner routine or an unexpected dish at dinner can break up the monotony of the week and spark some meaningful time at the table.
Tonight's Quick Menu:
Salad- Arugula, radichio, endives, pine nuts, Paremsan and EVOO. Prep time under five minutes. Salad inspitred by www.bice.com restaurant.
Salmon: Sear it in a hot and slightly oiled pan for 3-4 minutes on each side, depending on thickness.
The salmon is delicious as it is, with some Celtic salt and freshly ground pepper, but we decided to make a lemon shallot sauce that I found while browsing through cookbooks on Sunday. It took about 25 minutes to make, but I didn't mind. I had some help and some bubbles, and it felt like a fun night out!
Cherries and a piece of chocolate for dessert- effortless.
You could add a side dish to this dinner or serve the French cheese course, and there is nothing to cook. You can learn more about the French cheese course here.
