This evening is one of those evenings I can't muster the will to make dinner. Even though it was Sunday, it was an intense workday with no rest for the weary. This morning, anticipating the long and exhausting day ahead, I did a little dinner prep before the day got the best of me, and I won the "What's for dinner?" game. Last night, I put rice on while I was in the kitchen anyway. It took me just a minute to prepare. I used the tip my friend Chef Marie taught me: boil the rice for about four minutes, then take it off the heat, cover it, and let it sit. Now it is ready to use.
