Like the grilled cheese with truffle oil, this version is an elevated twist on the classic. It came about one day when I was looking for something to make for lunch, and it’s been a favorite with the kids ever since. It’s a simple way to expand kids’ palates, pack in plenty of nutrients, and keep it kid-friendly!
Bread of your choice
Cheese of your choice (like Gouda, mozzarella, Comté, Brie, Gruyère, or a mix)
Butter
Pesto ideas:
Dill or Parsley
Melt butter in a pan over medium heat.
Spread pesto on one side of each slice of bread.
Place slices of cheese over the pesto.
Top with the second slice of bread.
Fry the sandwich for a few minutes on each side until golden brown and the cheese is melted.
I usually cover the pan with a lid while cooking to help the cheese melt faster and reduce the chance of burning the bread. If you don't have a lid that fits, a cookie sheet works well too.
