1/4 cup cream
Vinegar - red or white wine vinegar, sherry vinegar, or champagne vinegar
Sea salt & freshly ground pepper
Whisk about a quarter cup of cream for 10–15 seconds.
Add a splash or two of vinegar.
Whisk for a few more seconds until it thickens.
Taste and add more vinegar if desired.
Add sea salt & freshly ground pepper to taste.
