This elegant salad brings together a few ingredients to create something remarkable: sweet pear, peppery arugula, creamy Bleu d'Auvergne, and crunchy walnuts— drizzled with a fresh lemon dressing. It's proof that good food doesn't have to be complicated. Here's the "recipe".
Prepare the dressing in a salad bowl by whisking together the lemon juice, olive oil (about two parts olive oil to one part lemon juice) and sea salt to taste. You can read the full recipe here.
Add the arugula to the bowl and toss.
Plate the arugula and slice the pears.
Place the pears, a slice of Bleu d’Auvergne cheese, and walnuts on the top of the arugula.
Serve and Enjoy. This is one of my favorite vacation lunches or first courses paired with a pan-seared steak or fish en papillote.
Bleu D'Auvergene cheese is a mild, creamy bleu cheese. It is common at many grocery stores, but if you can't find it, any blue cheese of your liking will do. You can also ask the cheesemonger for advice and a sample!
