Here's a recipe idea for stretching leftover pesto: pesto cream. With just pesto and heavy whipping cream, you can whip up a wonderful dish in no time. 

Ingredients

Heavy whipping cream

Instructions

Put some pesto in a saucepan and stir in a touch of cream.

Warm the mixture over low heat while whisking to combine well and create a creamy sauce. That’s it!

The amount of cream needed will depend on the quantity of pesto used. As a guideline, for every 2 tablespoons of pesto, add about 1 teaspoon of cream. The goal is to create a creamy sauce while preserving the rich flavor of the pesto.

Serving Ideas

Toss pesto cream with pasta for a primi piatti or main dish, with or without some freshly grated Parmesan cheese.

Warm with leftover chicken to add flavor and rehydrate the chicken. Serve the chicken with pesto cream alone or rolled into French crêpes. (A good reason to keep some crêpes in the freezer.)

Put pesto cream on white fish and bake.

Add pesto cream as a layer of flavor on steamed vegetables like green beans or baked cauliflower.

Spoon over leftover potatoes for a quick side dish.

  • Save your leftovers, no matter how small. They can be the key to your next easy and excellent meal.
  • Store homemade pesto in ice cube trays.
  • Make a batch of French crêpes and store the extras in the freezer. They warm in two minutes and make an easy meal!
