Baked potatoes with olives is an easy side dish I made one day with leftover boiled potatoes and a few French olives. The ingredients are simple, yet they come together to create a remarkable flavor. I threw it together while I was waiting for dinner to warm, and it was ready for the next day. When you have a few fresh ingredients and some creativity, and you think ahead, you will always have a great dinner ready.
Potatoes of your choice - I usually use yellow potatoes
Olive oil
Celtic salt or sea salt
Freshly ground black pepper
Rosemary or thyme (optional)
Preheat the oven to 350° F.
Slice potatoes and place them in a baking dish. The potatoes can be peeled or unpeeled.
Drizzle the potatoes with olive oil.
Add the olives to the dish.
Add your herbs if you have some.
Bake the potatoes until tender.
