Fennel, Orange and Radish Salad
While hunting for a little something to serve as a first course, I pulled together this salad. Made with what I had on hand, it’s proof that you don’t need a fully stocked kitchen to create something delicious — just a few of your favorite ingredients! I hope this inspires you to create something delicious and exciting with whatever you have on hand one day.
Ingredients
- Fennel bulb, thinly sliced
- Radishes, thinly sliced
- Oranges, peeled and sliced
- Fresh parsley, chopped
- Olive oil
- Lemon juice
- Shaved Parmesan cheese
- Sea salt
Instructions
Prepare the ingredients: Slice the fennel and radishes. Peel and slice the orange.
Make the lemon dressing: In a salad bowl, whisk together olive oil and lemon juice (about 2 parts olive oil to 1 part juice).
Assemble the salad: Add the fennel, radishes, oranges, parsley, shaved Parmesan, and a pinch of sea salt. Sprinkle the parsley and chives over the top.
Mix the salad and serve!
