Here's another cozy, elevated twist on the classic grilled cheese — grilled cheese with sage butter. Like the grilled cheese with truffle oil and grilled cheese with pesto, this version adds a flavorful twist that's perfect for expanding kids' palates. It’s a subtle way to introduce them to new flavors while packing in extra nutrients and keeping the dish kid-friendly.

Made with herbed butter incorporating fresh sage, you can also experiment with other types of herbed butter to create a variety of flavors. Learn more about making and freezing herbed butter here.

Ingredients

Instructions

Make the herbed butter by mixing softened butter with finely chopped fresh sage leaves (or any herb of your choice). For convenience, keep extra herbed butter in the freezer so it’s always ready.

Melt some of the herbed butter in a pan over medium heat.

Place the cheese of your choice on one slice of bread, then top with another slice.

Fry the sandwich in the pan for a few minutes on each side until the bread is golden brown and crispy and the cheese is melted. Add more herbed butter to the pan as needed for extra flavor and crispiness.

Notes:

I usually cover the pan with a lid while cooking to help the cheese melt faster and reduce the chance of burning the bread. If you don't have a lid that fits, a cookie sheet works well too.

I often cook "au pif," as we say in France, which means cooking without an exact recipe and by "feel" using your intuition.  You’ll find guidelines in many recipes versus exact quantities.  Write to me here if you have any questions about the recipes.

They were so excited when I put the food in the middle of the table. They asked for it the next day, Can we do that special fancy dinner thing where we have a feast? It really is such a better ritual—passing the food around and all sharing from the same platter, a real game changer."
