Bread of your choice
Cheese of your choice (like Gouda, mozzarella, Comté, Brie, Gruyère, or a mix)

Make the herbed butter by mixing softened butter with finely chopped fresh sage leaves (or any herb of your choice). For convenience, keep extra herbed butter in the freezer so it’s always ready.
Melt some of the herbed butter in a pan over medium heat.
Place the cheese of your choice on one slice of bread, then top with another slice.
Fry the sandwich in the pan for a few minutes on each side until the bread is golden brown and crispy and the cheese is melted. Add more herbed butter to the pan as needed for extra flavor and crispiness.
I usually cover the pan with a lid while cooking to help the cheese melt faster and reduce the chance of burning the bread. If you don't have a lid that fits, a cookie sheet works well too.
