I’ll share some inspiration for a simple orange salad, but first, a reminder that when you read the recipes at Return to The Table, read them not always to make the dish exactly but rather as inspiration for what you can make with a few of your favorite ingredients — and a few minutes.

This first-course idea was inspired by my sister-in-law Danick. It came in very handy one evening when I was out of salad and needed a quick first source for dinner.

It was delicious and has stayed on my menu, although I wasn’t sure about the combination of oranges and olives at first. This is proof that when you combine your favorite ingredients, it can’t be bad! Here’s how I put this orange salad together, and I've included a few more ideas for you to create a similar salad.

Danick served her orange and olive salad at a party in France — tout le monde se régale — everyone loved it!

Ingredients

Orange

Olives

Vinaigrette

Basil

Instructions

Slice the peel off an orange and slice the orange.

Add some olives — as many as you like.

Drizzle with a simple vinaigrette.

Top with a few fresh basil leaves, if you have some.

I made this with a classic French vinaigrette and added some shallots. It’s also delicious with a simple lemon dressing.
