Roasting is a quick and easy way to bring out the natural sweetness of zucchini with a bit of caramelization — and have a versatile ingredient on hand, ready to roll into a multitude of dishes. You will find some serving ideas in the notes below.

Ingredients

  • Zucchini
  • Olive oil

Instructions

Preheat your oven to 350 °F (180 °C).

Wash and dry the zucchini. Slice it into rounds or in half. When cooking in halves, score the zucchini before roasting. This will help the Zucchini cook more evenly and enhance the texture — and it's pretty! 

Drizzle olive oil over the zucchini and toss to coat evenly.

Place the zucchini slices in a single layer on a baking sheet.

Roast in the oven for 15-20 minutes, then test for doneness and bake until the zucchini is tender.
