These zucchini rounds are topped with homemade tomato sauce and melted mozzarella, creating zucchini “pizza,” as my kids like to call it. Inspired by leftover roasted zucchini and homemade tomato sauce, I was lucky to have mozzarella on hand — and voila! It's a quick and easy main dish that I paired with a soup from the freezer and fruit salad for dessert. 

Often, when I pull together leftovers, I can’t recreate the exact dish because I don’t have the same leftovers again. But this dish made it onto the family menu. Now, I purposely roast extra zucchini so I can make zucchini pizzas again — which was voted an acceptable way to eat zucchini at my house.

Here's how you can make this dish from scratch, but when you have leftover baked or roasted zucchini in hand, it's fast to make. Just add sauce and cheese and bake! 

 

Ingredients

  • Zucchini
  • Tomato sauce
  • Fresh mozzarella cheese
  • Olive oil for drizzling

Instructions

  • Preheat your oven to 350° F.
  • Arrange the zucchini slices on a baking sheet lined with parchment paper or put a few drops of olive oil on a sheet pan and rub it around to coat the pan. This will prevent the zucchini from sticking to the pan. 
  • Drizzle lightly with olive oil.
  • Roast the zucchini in the oven for about 15 minutes, until they start to soften and slightly brown.
  • Remove the zucchini from the oven and spoon tomato sauce on top. Top with fresh mozzarella.
  • Return the zucchini to the oven and bake for another 10-15 minutes until the cheese is melted and bubbly. I often broil for 3-4 minutes at the end until the cheese is golden brown.
  • Enjoy!

You can slice the zucchini in rounds or in half — however you slice it, this dish is sure to be a delight!
